Joan's Scones - If you've ever enjoyed a scone in our Mountainville Cafe and yearn to repeat or share the experience, here is a do-it-yourself version of the very same recipe. This traditional scone has a subtle touch of ginger and lemon zest. Mix makes 6-8 scones.
Cornmeal Griddle Cakes - Don't worry, I don't have a griddle either -- you can use a pan. And they are s-o-o easy -- just add water and a little melted butter. We love them with maple syrup, but adding fresh berries to the batter while they cook or topping with jam would also make for a scrumptious breakfast. Even a light supper if there weren't any meat-and-potato types impatiently banging their cutlery at the table. Serves 4-6.
Alice's Pancakes - Alice is a superb baker and this is her recipe for the simple, but delicious pancakes that she raised her family on. Peter and I made a test batch with blueberries and became instant fans. Alice notes that if you happen to make too many, you can freeze them and put them in the toaster for a quick breakfast another day.
