This goat milk caramel, aka cajeta (kah-hay-ta) is made by hand here on Deer Isle on Yellow Birch Farm. Cajeta is a traditional slow-cooked caramel that starts with goat's milk. It is stirred by hand in a large copper pot with organic sugar and a little Maine maple syrup to yield an earthy and sumptuous nectar that is perfect for ice cream, of course---but we also drizzle on pear or apple slices, when not savoring it directly by the spoonful!
